GUYANA'S TASTY EXOTIC
This of course is my famous CURRIED DUCK...
Not too many words here at this end, it's spicy taste can be curtailed to suit your heat index tolerance. Adding some yukon gold potatoes makes for a smooth, velvety texture that mellows the excessiveness of the various spices. Because Duck is gamey, when its cooked in a curry sauce with the right amount of seasonings and spices it's gamey flavor is overshadowed or as I like to say," dressed for success at the dinner table".
For folks who like rustic cooking, my Mom loved cooking out doors under the trees in our backyard. Sometimes our food was served in large leaves that she picked in the garden for effect. She used a large pot, and cooked on a clay made stove called a fireside. If you have never eaten a classic fireside prepared meal, you are missing out on quite an experience. The term "fireside" was used to describe a clay made open ended outdoor oven-like cooking alternative. One can use coals, or wood ignited by kerosene and I clearly remember my Grandmother having one in her kitchen. Meals prepared this way acquired an enriched smoke flavor and was uniquely pleasing. In retrospect, I would definitely say that it was like using a Tandoor Oven.
