Mom always made a bird exactly like this one, except it was stuffed. I could never get enough of her stuffing, she seasoned her stuffing with thyme and onions and loads of other natural seasonings. Christmas time in Guyana was always so exciting, we always had a Stuffed Roast Chicken, Roast Leg of Lamb, Roast Leg of Pork and side dishes on our table for sharing with our friends and family.
